    Gently fry 1 crushed garlic clove in 1 tbsp olive oil, then add 75g panko breadcrumbs and cook, stirring, until golden. Scatter the garlicky crumbs over mashed potato just before serving for a flavoursome crunch.

    Heat a splash of olive oil in a frying pan and fry a handful of fresh sage leaves until crisp. Remove with a slotted spoon to a plate and add a handful of panko breadcrumbs to the pan.
