Simple ideas to use up leftover panko breadcrumbs

  • Crunchy mash topper
    Gently fry 1 crushed garlic clove in 1 tbsp olive oil, then add 75g panko breadcrumbs and cook, stirring, until golden. Scatter the garlicky crumbs over mashed potato just before serving for a flavoursome crunch.
  • Herby crispy topping
    Heat a splash of olive oil in a frying pan and fry a handful of fresh sage leaves until crisp. Remove with a slotted spoon to a plate and add a handful of panko breadcrumbs to the pan. Cook, stirring, until golden, add a crushed garlic clove and cook for 1 minute more. Add a pinch of chilli flakes and a good pinch of salt and pepper. Crumble in the crispy sage, then stir into pasta or use to top white fish.
