Invisible apple cake

In this incredible apple cake recipe from Oliver and Tom of The Exploding Bakery, the thinly sliced apples almost melt into the gorgeous, custardy batter.

Oliver and Tom say: “It’s a classic recipe that needs no tinkering, letting the flavour and a copious amount of apples do the talking. As the name suggests, there’s a disappearing act that takes place as the thinly sliced apples almost become one with the custardy cake batter, making it a pudding-like cake with hints of apple texture all the way through. A mandoline is perfect for slicing the apples, if you have one.”

  1. Sliced apples will quickly turn brown (oxidise) unless sprinkled with lemon juice, but here it’s probably easier to slice the apples and add them to the batter as you go.
