Jason Atherton’s Marmite tarts are a mind-bending combination of crisp, sweet pastry and a sweet-savoury custard filling laced with Marmite and HP sauce, no wonder they’re a favourite of diners at his acclaimed London restaurant, Sael.

After working with the likes of Ferran Adrià at El Bulli, Jason started his own restaurant business in 2010. Before you start
This recipe makes 4 small tarts, but you could use the pastry and filling to make one larger 25-30cm tart. The blind-baking time will be the same, but you’ll need to bake the filled tart for around 25-30 minutes. It’s tricky to make less pastry or filling without getting into ‘half an egg’ territory, but any leftover pastry freezes well and the filling will keep in the fridge for up to 3 days.

Don’t waste it Lightly whisk, portion in plastic bags, then freeze the leftover egg whites. Defrost to make meringues.
