“This no-bake cheesecake is so straightforward to make – just whizz (or bash!) the biscuit base and press it in, then mix together the cheesecake layer and put it on top. There’s no baking involved. The only slightly tricky bit is the jelly, but as long as you seal any gaps and go slowly, all will be fine. This cheesecake is as delicious as it is charming.” Kim-Joy

Before you start
The Joy Factor Jelly-sweet sharks and little creatures in peach rings! There is so much delight to be had with this recipe. A reminder to listen to yourself and rest when you need to, but also to keep playing.
Kim-Joy’s Tips For best results when pouring the jelly, put the cheesecake in the freezer for 5 minutes before pouring on the first layer of jelly. Also, make sure the jelly isn’t warm before pouring – it should be cool to the touch.
If there are any gaps at the sides of the cheesecake, you may notice some jelly seep out. Don’t worry – this is why you’re starting with a thin layer, rather than all the jelly in one go! This thin layer will set and seal up any possible gaps, so when you pour the rest in, it won’t leak.
You can customize this in so many ways! You could use cookie crumbs to make a beach scene, or you could use any sweets that you like. You can also make your own cookie characters to fit whatever theme you have in mind! When you quieten everything around you, sometimes you bring out the sharks in your mind. But what you may see as a dangerous shark could actually be a friendly whale shark!
