  1. To remove the nectarine skins, first cut the fruit into wedges, then run a knife between the skin and flesh.

  2. Make the praline and purée the nectarine up to a day beforehand. Use your favourite seasonal fruit to make the purée.

  3. Sweet Aussie semillon would be terrific.
