Juicy prawns are tumbled with a tangy lemongrass, lime and chilli dressing, then served with coriander for freshness and crispy shallots for crunch in this Thai salad recipe from Marni Xuto.

  1. Nam prik pao is a type of roasted chilli paste (often called ‘jam’) which contains lots of tamarind. Find it online or in Asian grocers. Alternatively, a tamarind-rich barbecue sauce will deliver the same complex sweetness.
