How to prepare lemon grass stalks

Take the guess work out of the preparation of this fragrant ingredient with our step by step guide.

  1. Lay the stalk on a flat work surface, then bash along the length of it with the blunt edge of a large, heavy knife. This will release the aromatic oils.

  2. Trim off the white end of the bashed lemongrass stalk and discard.

  3. Peel away the tough woody layers, stopping when you get to the tender centre. You may need to remove 3 or 4 layers, depending on the age of the stalk.

  4. Discard the outer layers, then slice the soft middle as finely as you can, ready to use in your recipe.
