How to prepare lemon grass stalks
Take the guess work out of the preparation of this fragrant ingredient with our step by step guide.
- Lay the stalk on a flat work surface, then bash along the length of it with the blunt edge of a large, heavy knife. This will release the aromatic oils.
- Trim off the white end of the bashed lemongrass stalk and discard.
- Peel away the tough woody layers, stopping when you get to the tender centre. You may need to remove 3 or 4 layers, depending on the age of the stalk.
- Discard the outer layers, then slice the soft middle as finely as you can, ready to use in your recipe.
