Whole artichokes may seem daunting but they’re easy to prepare. Once peeled, use them to make this gorgeous artichoke, onion and brie tart – it’s perfect for enjoying in the sun, with a glass of French white.

  1. If you can’t find any baby globe artichokes, use a total of 6 regular globe artichokes.

  2. For the acidulated water, fill a large bowl with cold water and squeeze in 1-2 lemons, then throw in the squeezed halves.
