  1. Barkham blue is a blue-veined, buttery-yellow cheese with a slightly crumbly texture. It melts beautifully and goes well with the sweet onions and peppery watercress. Or you could use old sarum blue, isle of wight blue, barkham chase, dorset blue vinny, dunsyre blue and, of course, stilton. From the continent, try roquefort, gorgonzola or dolcelatte.
