Moutabal (also known as baba ghanoush) is a smoky aubergine dip  made with olive oil,  lemons, tahini, pine nuts and plenty of garlic.

  1. If you’re cooking inside rather than outside on the barbecue, char the skins in a hot griddle pan over a medium heat, then transfer to an oven preheated to 180°C/fan160°C/gas 4 and cook, covered with foil, for 20 minutes until softened through.
