  1. Cover the celeriac with butter and wrap in foil (step 2), then chill for up
    to 1 day. Allow to come up to room temperature before roasting. 

  2. Whites with a nutty hint, such as Italy’s arneis or a white from France’s Rhône Valley, will go down better here than brightly fruity ones.
