delicious. tips

  1. If you’re not piping the icing you may not need all the buttercream. If you wrap it well it will keep in the fridge for up to 3 days.

  2. Make and ice the cakes up to a day ahead. Keep in a cool place in an airtight container. Wrap the sheet of caramel in non-stick baking paper and store somewhere cool and dry (not the fridge) for up to a day before using.

  3. Sugarplums aren’t crystallised plums but layers of hardened sugar, expertly wrapped around a cardamom or caraway seed. We’ve taken the flavours of this and created beautiful cardamom caramel shards to top our cakes.
