What to do with leftover dolcelatte cheese

  • Roasted fig, parma ham and dolcelatte salad for one
    Heat the oven to 200°C/180°C fan/gas 6. Cut 2 fresh figs in half lengthways, then put them in a small baking tray and drizzle them with a little oil. Bake for 10 minutes or until soft. Put a handful of rocket on a plate, then top with the roasted figs and three pieces of parma ham or cooked bacon. Crumble 30g dolcelatte cheese over the salad, then drizzle with a little extra-virgin olive oil and good quality thick balsamic vinegar to serve.
  • Dolcelatte-stuffed chicken breasts
    Heat the oven to 200°C/180°C fan/gas 6. In a small mixing bowl, combine 100g crumbled dolcelatte cheese with 2 crushed garlic cloves, the finely grated zest of 1 lemon and a pinch each of salt and pepper to season. Stuff the mixture under the skin of 4 free-range chicken breasts, then put in a medium baking tray. Drizzle with olive oil, then roast for 20-25 minutes until the chicken is cooked through and the dolcelatte cheese has melted.
