How to use up leftover pomegranate molasses

  • Lamb marinade
    Combine pomegranate molasses, crushed garlic, dried sumac and olive oil in a bowl, then season well. Add lamb chops and rub in well. Marinate for 30 minutes, then grill.
  • Pomegranate houmous
    Whizz a tin of drained chickpeas with tahini, pomegranate molasses, crushed garlic, lemon juice and seasoning in a food processor. Pour in a few tbsp of olive oil in a thin stream until smooth and creamy. Top with fresh pomegranate seeds.
  • Sparkling cocktail
    Pour 1 tsp pomegranate molasses into a champagne flute and top with prosecco or cava. Or use sparkling water to make it a mocktail.
