  1. Make the smashed white beans up to a day ahead and keep covered in the fridge. Reheat in a pan with a splash of water, if needed, before serving.

  2. Match this with a light, dry white that’s bright with citrus flavours. Picpoul de pinet or French sauvignon blanc both work well.
