This quick raspberry ice cream needs just three ingredients. No ice cream machine is necessary to make this super quick and refreshing summer dessert.

Ingredients

600ml double cream
2 tbsp icing sugar
350g frozen raspberries – or berries of your choice

Method

Pulse the double cream in a processor with the icing sugar until stiff peaks form.
Add the berries, whizz until smooth, then taste and add more icing sugar if needed. Serve immediately.
