Fattoush salad

This delicious Fattoush salad recipe is herby and fresh.

Ingredients
- 3 pitta breads, toasted and torn into bite-size pieces
- 1 romaine lettuce, leaves torn
- 6 spring onions, sliced
- 1 cucumber, halved lengthways and sliced at an angle
- 10 radishes, thinly sliced
- Small bunch of fresh flatleaf parsley, finely chopped
- Small bunch of fresh coriander, finely chopped
- Small bunch of fresh mint, finely chopped
For the dressing
- Juice of 1 lemon
- 4 tbsp olive oil
- 2 garlic cloves, crushed
- 2 tsp sumac (available at Middle Eastern shops, Waitrose and online at steenbergs.co.uk)

Method
- Place all the salad ingredients into a large bowl and mix together well. Mix together the dressing ingredients, pour over the salad and toss again so everything is well coated, then serve.

I love this recipe because I have just turned 30 and I have given up unhealthy foods and smoking etc I now exercise and I am really getting in to the Salads. I have made this dressing before and its amazing really brings the salad to life. It looks so fresh and refreshing and perfect for a lovely summers evening
