Next time, add a little more beef stock, season to taste, then serve as a warming broth.
Freeze after step 2. Defrost the cooked, cooled braise, then reheat and finish the recipe.

I made this for 2 with 500g beef, but kept all the rest the same. In fact, add more pak choi, it’s delicious in this dish, the more, the merrier!
Cook for at least 2 hours, in my opinion & chop the beef no larger than 3cm square if you want it falling apart.
Can’t wait to have this again!
