Serves 1

Hands-on time 5 minutes, plus overnight chilling

  • 150g tub Skyr strawberry
  • 75ml semi-skimmed milk
  • 75g jumbo oats
  • ¼ tsp vanilla extract
  • 1 tbsp pumpkin seeds
  • 2 tbsp roughly chopped almonds
  • Handful sliced strawberries
  • 1 tbsp runny honey

You’ll also need…

 

  • Jam jar or Kilner jar
  1. In a mixing bowl combine the Skyr strawberry and milk. Stir through the oats, vanilla,  pumpkin seeds and half the almonds, then fold in the strawberries, taking care not to break up the fruit.
  2. Spoon the mixture into the jar, seal with the lid and store in the fridge overnight. In the morning top with the remaining almonds and and a drizzle of the honey.
