Blue cheese dressing

This rich and creamy blue cheese dressing recipe works really well with a watercress, avocado and radish salad.
- 50g blue cheese (Gorgonzola is good)
- 2 tbsp milk
- 1 tbsp white wine vinegar
- 6 tbsp olive oil
- Put the cheese in a food processor with the milk, vinegar, oil and some seasoning, and blend until smooth. Add a few drops of warm water if it’s a little thick.
