Ingredients

  • 150g tenderstem broccoli
  • 2 tbsp groundnut oil
  • 2 x 300g sirloin steaks, sliced
  • 1 banana shallot, sliced
  • 3cm fresh ginger, cut into thin sticks
  • 1 garlic clove, sliced
  • 1 red chilli, sliced
  • 1 red pepper, sliced
  • 100g mangetout
  • 1 tbsp toasted sesame oil
  • 1 tbsp clear honey
  • 2 tsp soy sauce
  • Good squeeze of lime juice
  • Handful of fresh coriander leaves

Method

  1. Blanch the broccoli in boiling water for a couple of minutes, then drain and refresh under cold water.
  2. In a wok or frying pan, heat half the groundnut oil over a high heat, then fry the steak until just done. Remove from the pan and set aside.
  3. Heat the remaining oil and fry the shallot, ginger, garlic and chilli for 2-3 minutes. Add the broccoli, pepper and mangetout and cook for 1-2 minutes. Return the steaks to the pan with the sesame oil, honey, soy sauce and lime juice. Toss together, scatter with coriander, then serve.
