Vanilla sugar
Vanilla sugar does what it says on the tin. Make it at home by splitting a fresh pod open (don’t scrape out the seeds) and sticking it in a jar of sugar to infuse. It’s a great way of using up a spent pod by making it go a little further. Leave for at least a day – the sugar can then be used in dishes where a vanilla flavour is desired.
