How to use up leftover kalamata olives

  • Fried feta olives
    Drain and rinse leftover olives, then pat dry. Stuff crumbled feta into each olive. Half-fill a medium heavy-based pan with vegetable oil and heat to 180°C when tested with a digital probe thermometer. Put seasoned flour, beaten egg and fine breadcrumbs into 3 separate bowls. Dip the olives in the flour, then the egg, then the breadcrumbs. Fry for 3-4 minutes until golden and crisp.
  • Olive-crusted cod
    Heat the oven to 200°C/180°C fan/gas 6. Mix a handful of finely chopped olives (drained and rinsed) with 50g melted butter, 100g dried breadcrumbs, the finely grated zest of 1 lemon and a handful of finely chopped fresh parsley. Put 4 skinless and boneless cod fillets in a baking tray and top them with the olive mixture. Bake for 12-15 minutes until the fish is opaque and the breadcrumbs are crisp. Serve with potatoes and a crisp green salad.
