How to use up leftover wholegrain couscous
- Stuffed peppers
Fry a chopped onion, add minced beef and brown well. Stir in cooked couscous and some crumbled feta. Use to stuff halved red peppers and bake at 180°C/160°C fan/gas 4 for 20 minutes or until the peppers are soft. - Couscous salad
Combine cooked couscous, raisins, chopped pistachios (or any nuts you have handy), fresh rocket leaves and a handful of fresh parsley leaves. Dress with lemon juice and a good glug of olive oil, then season well.
