Asian salad. Toss cooked and cooled ho fun noodles with chicory, thinly sliced cooked duck and a light hoisin dressing made with hoisin sauce, lime juice and sesame oil.
Canapé wraps. Fill soaked and softened rice paper wrappers with shredded spring onion, cooked king prawns, cooked and cooled ho fun noodles, finely chopped fresh mint and coriander, and beansprouts. Roll up and serve with a chilli and soy dipping sauce.
