How to use up leftover semi-dried tomatoes

  • Zesty grains. Drain and finely chop semi-dried tomatoes, then stir through cooked grains with a squeeze of lemon juice, rocket and chopped avocado.
  • Scrambled eggs. Drain and chop semi-dried tomatoes, then stir into scrambled eggs with torn fresh basil leaves. Serve on toast, topped with crumbled feta.
  • Cheese ‘n’ tomato toastie. Top toast with caramelised onions, sliced cheddar and drained semi-dried tomatoes. Put under a hot grill until the cheese is golden and bubbling.
