Marinades are a marvellous way of imparting extra flavour into meat, fish or vegetables, by leaving food to infuse with other flavours before cooking.

 

Typically a mix of oil, acid (vinegar, yoghurt or lemon) and other flavourings, such as wine, spices or herbs are used as a base for a marinade. This technique can also help to tenderise meat.
