No, not just a soup ingredient although you can still use it for that too. Miso paste, made from fermented soya beans, is a traditionally Japanese ingredient. It’s versatile enough to work well as a marinade, glaze or use it in sweet dishes too. Look for quality miso in supermarkets, good greengrocers or online.
