How to use up leftover cashews

  • Nut butter
    Whizz 250g cashew until smooth in a food processor [about 10 minutes], then add a pinch of salt and whizz briefly. Wonderful on sourdough toast.
  • Crunchy coleslaw
    Toast the cashews on a baking tray for 10 minutes at 180C/160C/gas 4. Roughly chop, then add the nuts to an Asian-style coleslaw for extra crunch.
