I hooked up with Selfridges because…

I have always had a slight affiliation with Ewan Venters and Selfridges endorsing their products and through that the opportunity to open a restaurant and champagne bar in the store would enhance everything that we have done together so far.

The difference with running a restaurant in a department store is…

there’s a different customer base and expectations can be different!

My favourite dish on the new menu is…

the prawn cocktail.

I’m most fulfilled at work when…

everyone gets it right and the customers leave happy.

I get depressed when…

everyone gets it wrong and customers leave disgruntled.

When I visit my restaurant in Lyme Regis I…

probably drive them mad! I have a place in Charmouth so I spend most weekends there. I always hope the sea is calm and the weather is good as I also have a boat down there which I fish from.

When I cook a quick supper at home I eat…

simple things like welsh rabbit, pasta with bottarga; handy store cupboard staple to have.

I relax by…

escaping London and going to Dorset, hopefully slipping in a bit of fishing over the weekend.
