Coronation slaw

A touch of curry powder and some fresh coriander gives classic coleslaw a coronation twist. Using a food processor to shred up your veg, makes light work of this slaw.

Ingredients

  • 2 carrots
  • ½ white cabbage, cored
  • 1 red pepper, deseeded
  • 100g yogurt
  • 80g mayonnaise
  • 1 heaped tsp curry powder
  • Juice 1 lemon
  • 25g coriander, leaves picked

Method

  1. Use the grating attachment on your food processor to shred the carrots, then swap with the slicing attachment and use that to shred the cabbage and red pepper.
  2. In a large bowl, combine the yogurt, mayonnaise, curry powder and lemon juice, season well. Add the shredded vegetables and coriander and stir to combine. Season to taste, adding a little more lemon juice too if you like, and serve.

  • Make Ahead

    The slaw will taste better after a few hours, covered in the fridge so the flavours can get to know each other, and will keep for up to 3 days. Just bring it to room temperature before eating
