Healthy scrambled eggs with chives

Chives are a easy and tasty addition to these fluffy scrambled eggs, which makes a healthy and hearty breakfast.
- 16g fat (3.9g saturates)
- 18.3g (4.1g sugars)
- 2 eggs
- 4tbsp skimmed milk
- Chives, chopped, to taste
- 1 large flat mushroom
- 1tbsp olive oil
- 1 slice wholemeal bread, toasted, to serve
- Beat the eggs and milk together with some freshly ground black pepper and chopped chives to taste. Scramble on the hob or in the microwave.
- Brush the mushroom with olive oil and grill for 5 min or until softened. Pile the eggs on top of the toast, add the mushroom and serve.
