Ingredients

  • A bunch of fresh mint
  • 2 tsp caster sugar
  • 2 tbsp red wine vinegar

Method

  1. Pick and finely chop the leaves of a bunch of fresh mint. Place in a small bowl and stir in the caster sugar.
  2. Pour over 75ml boiling water, stir to dissolve the sugar, then add the red wine vinegar. Leave to cool and infuse.

    Try adding finely chopped red chilli for a hint of spice, or 1 tbsp redcurrant jelly instead of the sugar.
