How to use up leftover apricot jam
- Chocolate and apricot sandwich cake
Instead of using buttercream or cream, use apricot jam to sandwich two chocolate sponges. The tartness of the jam works well with chocolate.
- Fruit tart glaze
When making a fruit tart, such as a classic apple tart, apricot jam will give it a shiny finish. Warm a little jam in a pan with a splash of water then brush over the fruit, cool and put in the fridge to set.
