How to use up leftover ground cloves

  • Pear and cranberry crumble. Mix chopped pears and fresh or frozen cranberries with 3 tbsp demerara sugar and a large pinch of ground cloves. Tip into a baking dish. Rub together 200g wholemeal flour, 100g butter and 70g light brown sugar to make a crumble, then scatter it over the fruit and bake at 180°C/fan160°C/gas 4 for 40-50 minutes until golden.
  • Ginger nut and clove ice cream. Put ginger nuts in a plastic bag, then use a rolling pin to smash the biscuits into tiny pieces. Mixinto softened vanilla ice cream with a pinch of ground cloves and finely grated orange zest. Put back in the tub, refreeze and serve with baked fruit.
