How to use leftover morcilla

  • Quick canapé
    Slice the morcilla into 1cm rounds, then fry on both sides until crisp and golden. Top with feta, shredded mint leaves and ground black pepper.
  • Winter salad
    Fry 100g sliced morcilla until golden, then add 1 drained 400g tin of butter beans and 75g sliced roasted peppers. Warm through, mix in 250g wasted baby leaf spinach, then dress with olive oil, lemon juice and 1/2 tsp chopped fresh rosemary.
  • Savoury breadcrumbs
    Crumble 50g morcilla, then fry in a splash of olive oil with salt until crisp. Add a handful of fresh sourdough breadcrumbs and a splash of oil if needed and fry until the crumbs are crisp. Stir in chopped parsley, then serve on fried eggs or as a pasta topping.
