How to use up leftover pistachios
- Punchy pesto
Put a large handful each of basil and parsley, and 1 garlic clove into a mini food processor with a generous squeeze of lemon, then whizz, adding 1 tbsp water if needed. Add 2 tbsp roughly chopped pistachios and pulse until finely chopped. With the motor running, pour in extra-virgin olive oil until the mixture resembles a wet paste. Season well and serve tossed into pasta, or as a dip.
