How to use up leftover rye bread
- Quick canapé. Fry squares of rye bread in a little olive oil until golden. Drain on kitchen paper, then top with soft goat’s cheese and olive tapenade or semi-dried tomatoes. Serve with pre-dinner drinks.
- Easy brunch. Toast slices of rye bread, then spread one side with avocado mashed with lime juice, chopped fresh coriander, salt and pepper. Serve each slice topped with a poached egg and extra coriander, if you like.
