Grilled squid with cumin recipe

Cumin has a very addictive kick and is a key ingredient in Indian and Middle Eastern food. It works with most meats, fish and vegetables; if you use it in a marinade for squid, it just caramelises that creamy white flesh.

Ingredients

  1. 4 medium-sized squid weighing about 150g each, or 8 smaller ones, cleaned
  2. A little olive oil, for grilling and drizzling

For the spice mix

  1. 2 cloves of garlic, peeled and crushed
  2. 1/2tsp paprika
  3. 2tsp ground cumin
  4. 2tsp sea salt

Method

  1. 1. Mix all of the ingredients together for the spice mix, then coat the squid in the marinade and chill for at least 2 hours.
  2. 2. Preheat a barbecue or ridged griddle pan. Lightly oil the grill and cook the squid for 2-3 minutes on each side. Drizzle with olive oil and serve with a crisp green salad and lemon wedges.
