Basil infused into a sugar syrup makes fruit taste gorgeous, regardless of whether it’s a simple fruit salad or poached peaches that are liquidised to make an ice cream.
Ingredients
- 115g granulated sugar
- 5 fresh basil sprigs
- Zest of 1 lemon, plus juice of ½ lemon
- 4 ripe nectarines or peaches, stoned
- 400g raspberries
- 300g blackberries
Method
- 1. Put the sugar, 285ml water, the basil and lemon zest in a small pan over a medium-low heat, stirring, until the sugar is dissolved. Simmer for 10 minutes, remove from the heat, add the lemon juice and cool slightly.
- 2. Finely slice the nectarines or peaches and place in a bowl. Pour over the warm syrup, cool, then pick out the basil. Mix in the raspberries and blackberries and serve.
