Previously on Masterchef, Theo is passionate about making Greek and Cypriot food – and ingredients – a mainstay in kitchens outside the region.
We have a good chat while he cooks my favourite recipe from his third book; a wonderful sea bass, cooked in vine leaves, with heirloom tomatoes.
