Beetroot, new potato and chive salad

A great take on a traditional potato salad that includes baby beetroot, a mustard dressing and pumpkin seeds.

- 500g new potatoes
- 3 tbsp olive oil
- ½ tsp Dijon mustard
- 1 tbsp chopped fresh chives
- 8 cooked baby beetroot, quartered
- ½ red onion, sliced
- 1 tbsp pumpkin seeds
- Cook the new potatoes, halved, in a pan of boiling water until tender.
- Drain and mix with a dressing made of olive oil, Dijon mustard and chopped fresh chives. Season. Cool slightly, then add baby beetroot, red onion and pumpkin seeds. Serve.
