New potatoes are in season from April to July. These young spuds have a firm, waxy texture and sweet, slightly buttery taste. Of course, new potatoes are delicious steamed or boiled and finished with a little butter, but there’s so many more dishes you can make with this humble root veg.
Try them in a tortilla, or charred on the barbecue. Use your air fryer to make crispy new potato wedges, or rip and roast for the best-ever oven chips. Thinly slice to top a French tian tart or make a classic Spanish tapa.
