Italian-style chopped salad

The brilliant thing about this Italian-style chopped salad is you can use whatever you fancy – cheeses, nuts, celery, cucumber or radishes – just aim for crunch.

Ingredients

  • 1 romaine lettuce, sliced
  • 1 radicchio or 2 red chicory, sliced
  • 200g marinated or chargrilled artichoke hearts, quartered
  • 10 green pickled chillies, such as peperoncini or guindilla, sliced
  • 100g firm salami or saucisson, chopped into chunks
  • 40g picante gorgonzola cheese

For the dressing

  • 3 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 5 tbsp light olive oil
  • 1 garlic clove, crushed
  • 2 tsp Dijon mustard
  • 1 tbsp clear honey

Method

  1. Pour the dressing ingredients into a glass jar with a tight-fitting lid. Add 1/2 tsp each of sea salt and freshly ground black pepper. Shake well.
  2. Put all the other salad ingredients in a large bowl. Just before serving, pour over the dressing, then toss everything well.
