Quick chicken saltimbocca

Chicken and parma ham make a classic combination. This recipe shows you how quick and easy chicken saltimbocca is to make and there’s also some extra zing from a lemon butter dressing.

Ingredients

  • 1 chicken breast
  • 1 slice of Parma ham
  • 1 sage leaf
  • Flour, for dusting
  • Olive oil
  • 1 lemon, juiced and zested
  • Knob of butter

Method

  1. Bat out the chicken breast between two sheets of cling film (using a rolling pin) until about half as thick.
  2. Top with the Parma ham. Secure the sage leaf on top with a cocktail stick. Dust with the flour and season.
  3. Pan-fry in olive oil on both sides until tender. Add the lemon juice and butter to the pan and give it a quick sizzle. Garnish with lemon zest.
