Sugar snap pea gin

The vegetal sweetness of sugar snap peas adds fresh grassiness to gin in this easy flavoured gin recipe. Get ready for the best gin and tonic you’ll drink this summer.

- Makes about 700ml
- Hands-on time 10 min, plus 24 hours infusing
Ingredients
- 200g sugar snap peas
- 700ml gin
You’ll also need…
- 1 litre jar, sterilised
Method
- Put the sugar snap peas in the jar and pour over the gin. Seal and leave to infuse for 24 hours in a cool dark place, then strain through a fine sieve and funnel back into the bottle. The gin makes a cracking G&T, but may lose its flavour after around a week (if that happens, you can just re-infuse or enjoy it as a regular gin).
