Ingredients

  • 200g sugar snap peas
  • 700ml gin

  • 1 litre jar, sterilised

Method

  1. Put the sugar snap peas in the jar and pour over the gin. Seal and leave to infuse for 24 hours in a cool dark place, then strain through a fine sieve and funnel back into the bottle. The gin makes a cracking G&T, but may lose its flavour after around a week (if that happens, you can just re-infuse or enjoy it as a regular gin).
