How to use up leftover crème de cassis
- Berry crumble. Put 500g mixed berries, 50g sugar and 2 tbsp crème de cassis in an ovenproof dish. Top with a crumble mix and bake at 180°C/160°C fan/ gas 4 for 30 minutes or until the top is golden and the fruit is bubbling nicely.
- Boozy breakfast. Top warm pancakes with a dollop of ricotta, sliced poached or fresh pears and a drizzle of crème de cassis for a weekend brunch.
