Sticky chicken with jasmine rice recipe

Add flair to your midweek meals with this sweet sticky chicken recipe with jasmine rice.

Sticky chicken with jasmine rice

Ingredients

  1. 1 diced red chilli
  2. 2 sliced garlic cloves
  3. 1/2 a tbsp of honey
  4. 2 tbsp soy sauce
  5. 2 chicken breasts
  6. 150g jasmine rice
  7. 1-2 tbsp creamed coconut
  8. 1 tbsp toasted sesame oil
  9. Spring onions
  10. Toasted sesame seeds
  11. Fresh coriander
  12. Lime wedges

Method

  1. 1. Mix 1 diced red chilli, 2 sliced garlic cloves, 1/2 tbsp honey and 2 tbsp soy sauce, then use to marinate 2 chicken breasts for 20 minutes.
  2. 2. Simmer 150g jasmine rice until tender, drain, then stir in 1-2 tbsp creamed coconut.
  3. 3. Heat 1 tbsp toasted sesame oil over a medium heat in a griddle pan.
  4. 4. Cook the chicken (reserving the marinade) for 6 minutes on each side. Add the marinade and bubble for 2 minutes.
  5. 5. Slice the chicken, garnish with spring onions, toasted sesame seeds and fresh coriander, then serve with the rice and lime wedges.
